Major current research interests are on: 1) the identification of markers for the characterization of traditional and PDO cheeses, like fatty acids and terpenes, 2) the analysis of the production and evolution of volatile flavor compounds in fermented food (cheese, yogurt, but also beer and wine) as the result of the biochemistry activity of the microbiota, with the aim to identify defects or to improve flavor characteristics, 3) the evaluation of nutraceutical value of milk, cheese, egg and meat and how to improve it by feeding animals with diets containing high levels of n-3 fatty acids from plant oilseeds. She is the author of several papers in international journals and proceedings of international and national congresses and oral or poster presentation at international and national conferences.

He is member of the Italian Society of Agrarian Food and Environmental Microbiology (SIMTREA) and of the American Society of Microbiology (ASM). He has been Vice-director of the Department of Agricultural Biotechnology from 2009 to 2011. He has been Director of the Bachelor (undergraduate) Degree Course in Food Science from 2008 to 2016. His recent research interests are focused mainly on the isolation and characterization of food-grade bacteria endowed with interesting probiotic properties. Dr. DiRusso’s research focuses on the impact of dietary fatty acids on health and disease. The omega-3 fatty acids are required in our diet since we cannot synthesize them in our cells. When we eat foods rich in omega 3 fatty acids they become incorporated into cells and tissues and may influence our ability to prevent certain diseases. Among these are type 2 diabetes, heart disease, fatty liver and certain cancers. The DiRusso lab studies the impact of omega-3 fatty acids on liver and gut function to understand how these nutrients are processed by cells and how they influence gene expression. These studies are required to understand what kinds of fatty acids we should include in our diets and how much omega-3 fatty acids are required for growth, development and disease prevention.

Haleama Al Sabbah is an Associate Professor and Researcher in Public Health Nutrition. She completed her Ph.D in Public Health Nutrition (Medical Sciences) in 2008 from the Faculty of Medicine,/ Gent University, Belgium. She was awarded a doctoral scholarship from Belgian Technical Cooperation (BTC). Her Ph.D study was part of the National Study of Palestinian Health Behaviors in School-aged Children (HBSC-2004). From 2011-2012, Haleama was a Fulbright Senior Visiting Scholar and did Post-Doctoral studies in Public Health and Nutrition at Jean Mayer Human Nutrition Center,/ Tufts University, Boston, USA. From 2009 to 2013, she served as director of Public Health Department,/ Faculty of Medicine,/ An-Najah University, Palestine. Dr. Al Sabbah has published numerous articles in scientific journals and served as an editorial board member and reviewer for several peer-reviewed journals. She has participated in many conferences, courses and research studies all over the world, including Europe, USA, Canada, West Africa and some Arab countries. Haleama earned her first degree in Public Health Nutrition from the Faculty of Medicine/ Jordan University of Science and Technology (JUST) in 1990. She worked as a nutritionist in a number of hospitals in Amman, Jordan and then at Amman University. In 1995, she worked at the Red Crescent Society Maternity Hospital in Ramallah. In 1997, she was awarded a scholarship for postgraduate masters-level study in Public Health at the Community Health Institute, Birzeit University, Palestine. During her study at Birzeit University, she focused on Primary Health care. From 1998-2000, Haleama received another scholarship to study for a Master of Philosophy degree in International Community Health and Nutrition in the Faculty of Medicine at Oslo University, Norway. Her Master’s thesis title was “Diabetes Self-Management in Rural Palestinian Communityâ€.

Dr. Danilo Wilhelm Filho, is a biologist and MSc. and PhD at the Universidade Federal do Rio Grande do Sul (UFRGS, 1977), since 1983 at Universidade Federal de Santa Catarina (UFSC), and since 1994 became Professor at the same institution. During the last 30 years has been working on oxidative stress involving environmental contamination and human diseases (Chagas’ Disease, Down Syndrome, Hepatitis C, Nutrition and Obesity, among others), including occupational diseases related to coal mining and combustion, as well as on environmental toxicology related to industrial effluents and other contaminants such as pesticides (gliphosate and malathion), using fish and mollusks as bioindicators. In the last three decades he advised more than sixty students in Pharmacy, Biochemistry and Ecology, and published more than ninety papers in important scientific journals. Since 2013 became retired and is now a collaborator researcher at UFSC.

He has given numerous talks and participated at more than 55 conferences, meetings, and workshops in highly regarded institutions nationally and internationally. Weighing a mere 1.08 kg and anemic, the doctors gave me 72 hours to live. But I’m still here; against all the odds I survived, and now I want to be part of the solution. As a nutritionist, I cannot look the other way while women and children are dying of anemia and malnutrition on our watch. Fortunately, nutrition has become accepted as a global priority – it even has its own Sustainable Development Goal (SDG). But if we’re going to meet SDG3 – for good health and well being – we are going to need less business-as-usual, and more unusual business. But to have the greatest impact, to tackle malnutrition on every front – from under-nutrition to over-nutrition – we need to better understand what vulnerable populations eat and how. We need to understand what constitutes a healthy diet in the African context, to work with the public and private sectors to promote safe, diverse, and nutritious foods.

His research interest focused on the foodborne pathogens in street food, biofilm formation and bacteriophage as a potential agent to control these pathogens in food.
